Touch of Grace Biscuits

Before I left for New York, I made Food52’s touch of grace biscuits to perk up our week.  I have to say, I was disappointed.  These biscuits require quite a bit of coddling (literally), as you form their shape via tossing spoonfuls of dough in flour, rather than the traditional rolling and cutting (which is why these were so appealing in the first place).  Sadly, said coddling gets you nowhere.

As with other readers, my biscuits didn’t rise.  I used regular flour as opposed to self-rising flour but I made sure to incorporate the required 1 1/2 teaspoons baking powder for every cup.  Should I make these again I will double it.

Not only did they lack lightness and fluffiness and height, but they also lacked biscuit taste.  The flavor was fine, but not biscuit-y.  They reminded me of pancakes.  The apartment smelled like pancakes, and every bite, even days later, tasted like a pancake.  I suppose if you like Bisquick biscuits they taste spot-on, but that’s only a guess as I have no experience with Bisquick biscuits.  Blindfolded I would have guessed I was eating a rather dense Bisquick pancake.

I should say I baked mine for at least 10 minutes longer than directed.  I checked them every 2 minutes or so from 20 minutes onward, but they were nowhere near done.  Judging from other readers, this appears to be a common issue.

I’m not sure how the ladies at Food52 got theirs to turn out so wonderfully.  Mine were pretty blah and frustrating.  I’m experiencing some pretty serious biscuit envy.
